Grilled Oysters

Three ways to grill oysters, spicy, savory and full of umami!

Ingredients

1 dozen oysters

2 cups panko breadcrumbs, (regular or gluten-free)

6 oz salted butter, or non-dairy replacement (try coconut oil with miso ginger!)
 

SPICY 'NDUJA 

2 oz 'nduja (found at Cataumet Fish)

GARLIC HERB 

1/2 cup finely chopped herbs, such as parsley, chervil or cilantro

3 cloves of garlic, grated

3 tbsp lemon juice

MISO + GINGER BUTTER 

1/4 cup miso

1" knob of ginger, grated

Instructions

STEP 1

Heat grill to 475-500

STEP 2

Shuck oysters, being careful not to spill any of the liquor. 

STEP 3

SPICY 'NDUJA 

Combine butter and 'nduja in a small saucepan over medium heat, and heat, stirring often, until nduja is dispersed through butter. Combine with breadcrumbs and pack over oysters, packing into the oyster liquor. 

GARLIC HERB 

Melt butter with lemon juice and garlic, until just melted. Combine with breadcrumbs and herbs, and pack over oysters, packing into the oyster liquor. 

MISO + GINGER BUTTER 

Melt butter (or coconut oil) with miso and ginger. Combine with breadcrumbs, and pack over oysters, packing into the oyster liquor. 

STEP 4

Add oysters directly to grill grate, or to our cast iron grill pan, which we carry at Cataumet Fish. Cover, and cook 2-3 minutes until bubbly and browned.
