Grilled Oysters

Three ways to grill oysters, spicy, savory and full of umami!

Ingredients

​

1 dozen oysters

2 cups panko breadcrumbs, (regular or gluten-free)

6 oz salted butter, or non-dairy replacement (try coconut oil with miso ginger!)
 

SPICY 'NDUJA 

2 oz 'nduja (found at Cataumet Fish)

GARLIC HERB 

1/2 cup finely chopped herbs, such as parsley, chervil or cilantro

3 cloves of garlic, grated

3 tbsp lemon juice

​

MISO + GINGER BUTTER 

1/4 cup miso

1" knob of ginger, grated

Instructions

​

STEP 1

Heat grill to 475-500​

​

STEP 2

Shuck oysters, being careful not to spill any of the liquor. 

​

STEP 3

SPICY 'NDUJA 

Combine butter and 'nduja in a small saucepan over medium heat, and heat, stirring often, until nduja is dispersed through butter. Combine with breadcrumbs and pack over oysters, packing into the oyster liquor. â€‹

GARLIC HERB 

Melt butter with lemon juice and garlic, until just melted. Combine with breadcrumbs and herbs, and pack over oysters, packing into the oyster liquor. 

​

MISO + GINGER BUTTER 

Melt butter (or coconut oil) with miso and ginger. Combine with breadcrumbs, and pack over oysters, packing into the oyster liquor.

STEP 4

Add oysters directly to grill grate, or to our cast iron grill pan, which we carry at Cataumet Fish. Cover, and cook 2-3 minutes until bubbly and browned.
